Firehouse Architecture
The contest rules say, "All entries must depict a firefighting themed architectural structure, real or imaginary" which leaves quite a few options. Firehouses (or fire stations) come in all shapes, sizes and architectural styles. Some are made to blend in with surrounding buildings, while others were made to be unique, and stand-out from their neighbors.
Your gingerbread entry could be a fire department's training-tower, or perhaps a forest fire lookout, or for the really adventerious you could dreate a firefighting scene, complete with a burning building, fire apparatus, and gingerbread firefighters.
